Apple Maple Oatmeal Muffins
I have been craving apple muffins for weeks, and when I came across this recipe on Melanie’s blog I nearly scooped it off my screen. Apple muffins with maple glaze…doesn’t it just sound delicious? I realize apple-maple-oatmeal is more of a fall food combination, but it’s been cold and snowy and definitively un-spring like, so apple-maple-oatmeal it is.
Apple Maple Oatmeal Muffins
Preheat oven to 375 degrees
1/3 cup melted butter
1/2 cup milk
1/4 cup maple syrup
1 egg
1/3 cup sugar
1/3 cup brown sugar
Cream together in large bowl
1 1/2 cup flour
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1 TB baking powder
1/4 tsp salt
Sift together and add to butter/sugar mixture
Then mix in
3/4 cups oats
(Now, if you’re the type that likes nuts or raisins, you can add 1/3 cup of pecans and 3/4 cup of raisins…however I think both are nasty, so I left them out.)
Fill paper-lined muffin cups 3/4 of the way with batter and bake for 18-20 minutes.
Maple Glaze
1/3 cup powdered sugar
2 TB maple syrup
While the muffins are cooling, mix up the glaze and then drizzle it on top. Enjoy!
