Yellow Curry
So, I have this List for this year, things that I want to do. It’s not exactly like resolutions, because I think a resolution is something you need to work on all year long. At any rate, one of the things on my List is to learn how to make Thai food. So I went to an Asian grocery store and here is my first attempt. This dish was actually much easier than I thought and absolutely delicious.
Yellow Curry
1 TB olive oil
1/2 onion, sliced thin
1 cup coconut milk
1/8 cup yellow curry paste
1 cup coconut milk
2 chicken breasts, sliced thin
1 yellow potato, cubed (microwave for a minute or two, it will make the rest of this process go a bit easier.)
1 red pepper, sliced
1/2 yellow pepper, sliced
2-3 stalks lemon grass, sliced (I found lemon grass in the fresh-herbs section of my grocery store)
juice from 1/2 of a lime
chopped cilantro, smallish handful
Heat oil in a large frying pan, add onion and stir fry until soft. Add 1 cup coconut milk and curry paste. Stir until milk is hot and paste is dissolved.
Add additional cup of coconut milk and chicken. Cook until chicken is done.
Add potato, red and yellow paper and lime juice. Stir fry until veggies are soft. Add cilantro and cook for a minute or two. Serve over rice.
