I have tried several different banana bread recipes, some are lovely, most are middle-of-the-road, and one was entirely too oily for my taste.  I finally decided to combine the bits and pieces I liked from each of these recipes and come up with my own, blue-ribbon winning Banana Bread.  I have made 3 batches of this in less than a week and have decided this is definitely a keeper!

Preheat oven to350′ F

1 cup butter, room temp
2 1/4 cups white sugar
4 eggs
3/4 cup buttermilk
1/4 cup oil
6-7 bananas, smashed
2 tsp Mexican vanilla

4 1/4 cup flour
2 tsp. salt
2 tsp. baking soda
1 tsp. cinnamon
1 1/2 tsp. nutmeg

Whip butter and sugars until fluffy, add eggs, buttermilk, oil and vanilla and beat again.  Add smooshed up bananas and mix.  Sift dry ingredients into mixture and stir until just combined.  Pour batter into greased loaf pans or cupcake pan (with cupcake papers, it’s much easier than greasing those teensy muffin cups) bake for 50-60 minutes, or until toothpick inserted into center comes out clean.

Let cool on rack for about 15 minutes, then carefully shake out of pans and eat, um, I mean, let it cool some more. Ahem.
