Homemade Oreo Cookies
I don’t know about you, but I have always loved Oreo cookies, which is a little strange because I don’t typically love hard cookies. I have had this recipe for months and months, but hadn’t actually whipped them up until last week. People–they are heaven! And enormous! I highly recommend your next dessert (or lunch, or snack, or whatever) is these cookies! They only take about a half hour from start to finish, including baking time, so get cracking!
Homemade Oreo Cookies
Makes 12 cookie sandwiches
Preheat oven to 375
Chocolate Cookie:
1 – 1 1/2 cups sugar
1/2 cup + 2 tablespoons butter (room temperature)
1 egg
1 1/4 cups flour
1/2 cup cocoa powder
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
Filling:
1/4 cup butter
1/4 cup cream cheese
1 1/2 – 2 cups powdered sugar
2 teaspoons vanilla
Whip butter and sugar in electric mixer until light and fluffy, 2-3 minutes, add egg and mix again. Sift flour, cocoa, soda, baking powder and salt together and add to butter mixture. Mix until a stiff dough forms and cocoa is incorporated. Roll into equal-sized balls and flatten each a little, place on parchment lined baking sheet. I got 12 cookies per sheet. Bake for 9 minutes, cool for 3-5 minutes on baking sheet and them move to wire rack.
For filling, whip butter and cream cheese together, add powdered sugar and vanilla and beat until thick.
When cookies are mostly cool, you’ll want to make the sandwiches (if they are still warm, the cookies just crumble when you try to spread the frosting). Spread a good sized spoonful onto the back of a cookie–don’t be stingy–and then add another cookie to make an oreo sandwich. Enjoy!
