The invention of this dish goes back to my craving for Margherita pizza and my absolute lack of desire to make the dough.  That being said, I feel like this is one dish I will be whipping up for a quick dinner over and over again, it was delicious! This recipe is enough to use as a main dish for a quick dinner, although it would be a lovely side-dish for any Italian or garden meal.

Margherita Chicken Salad

2 or 3 strips bacon, diced
1 chicken breast, cubed
2 Roma tomatoes, diced (more if you like tomatoes)
6-8 basil leaves, washed, patted dry and chopped
1/2 cup shredded mozzarella cheese (more if desired)
balsamic vinegar to taste

Cook bacon until crispy, pat dry.  Add chicken to pan and cook until white all the way through.  Toss bacon and chicken with tomatoes, basil, cheese and balsamic vinegar.  I served this with easy cheese toast, I sliced some french bread really thin covered it in mozzarella and Romano cheese and popped it in the oven for a few minutes on Broil until the cheese was melty and the edges were crispy.
